Anybody else feel like they're dying on weekdays and living for weekends? Ever feel like life constantly beats you up with all the unending stress and drama? I feel you, pal! It gets the best of us, but everything will turn around eventually. For the meantime, why don't you whip up something really delicious this weekend, like this kick-ass cheesy tuna veggie omelette?
Cheesy Tuna Veggie Omelette

- Extra virgin olive oil, or unsalted butter
- 3-4 cloves of garlic, finely diced
- 1/2 cup of bell pepper, diced
- 1 cup of zucchini, cut into cubes or strips
- 1/2 cup of tomatoes, diced
- 1 small can of tuna flakes, drained
- 2-3 large eggs, beaten
- A handful of fresh basil leaves
- 1/2 cup of grated cheddar cheese, or any cheese of your choice
- Salt and pepper, to taste
Instructions:
- In a large non-stick flat pan, heat the olive oil or melt butter over medium high heat
- Add the garlic and saute, until brown and aromatic
- Stir-fry the bell pepper, zucchini and tomatoes together until half-cooked
- Add the tuna flakes and mix to combine with vegetables
- Pour the egg mix, top with basil leaves and cheese
- Using a spatula, push or swirl the egg around the pan for an even cook
- Season with salt and pepper, as desired
- Cover with lid and continue to cook over low heat, until omelette has set and can be flipped or folded
- Place on a flat dish, and serve immediately with steamed rice or toasted bread
This recipe is a no-brainer for me, but really packs a punch which makes it ideal for a power breakfast, or even a lazy brunch. Heck, you can even have breakfast for dinner! Why not, right?
