Easy Peasy Tomato Basil Quinoa with Veggies



"A moment on the lips, forever on the hips!" A line delivered by my favorite, Joey Tribbiani of Friends. Funny as it is, it is also painfully true. The past weeks have been stressful for me, staying out late in the office, eating too much fast food and being sleep deprived. It took its toll on me, and by the end of it, I felt bloated, cranky and ugly. Something had to change, and it starts with me.

Bear with me as I make baby steps towards health and wellness. It's gonna be a long process, but I know that it'll be worth it. I started exercising again, too! Woot woot~ 

Easy Peasy Tomato Basil Quinoa With Veggies

Ingredients:
  • 1-2 cups of quinoa
  • 2 tablespoons of extra virgin olive oil, and additional for cooking
  • 2 cloves of garlic, finely minced
  • 1 cup of zucchini, roughly diced
  • Half or 1 cup of red bell pepper, cut into cubes
  • 1/2 cup of shiitake or button mushrooms, thinly sliced
  • 4 tomatoes, diced
  • 10-12 basil leaves, finely chopped
  • Salt and black pepper


Instructions:
  1. Cook quinoa, as per package instructions and set aside to cool
  2. Heat 1/2 tablespoon of extra virgin olive oil in a wide pan, and saute garlic until aromatic
  3. Add the zucchini, bell pepper, mushroom, tomatoes and basi and sprinkle with salt and pepper, to taste
  4. Saute vegetables for 5-6 minutes, and remove from heat 
  5. In a serving bowl, toss the cooked quinoa and vegetables with 2 tablespoons of the extra virgin olive oil
  6. Add salt and/ or pepper, as desired and serve as a salad, or side
